Easy Chicken Recipes
Preparing chicken recipes for my in-laws was successful.
My in-laws came in our house to visit us the other day. I had no idea then what dinner to prepare. My mother in-law is suffering from diabetes and my father in-law has hypertension. I thought that they need a healthy, low-fat and low-sugar menu. And since they both love chicken, I listed down two easy chicken recipes that I planned to cook. Chicken is the most favorite meat of all ages. It’s an all-time family favorite.
Across the net, there are lots of chicken breast recipes to choose from. But I don’t want to prepare something very common. My in-laws visit us once in a blue moon, so I thought preparing something special for them would be great. I found easy chicken recipes such as Filipino chicken adobo, Indian chicken curry, and Korean grilled chicken.
Of all the easy chicken recipes that I found in the net, I decided to serve an easy Mexican dish. It is a man-tested dish that adults and kids would love. These are the procedures in making Mexican Chicken Enchilada. First, you have to make the chicken mixture. All you have to do is to put 5 ingredients together in a large bowl, and those are 3 cups of cooked chicken, chopped it after cooking, 2 cups grated cheese, 1 can chopped green chillies, ½ cup sour cream, and 1/3 cup fresh chopped cilantro. Stir them together until well blended. Then scoop up a spoonful of chicken mixture evenly onto the center of flour tortillas. Start rolling the tortilla in a way like you do in a jelly roll. Make sure all the chicken mixture is in the roll, arrange it and then seam sides down. Lightly grease a 6 quart slow cooker. Slowly and carefully stack tortilla rolls one by one in the slow cooker. You could also use crockpot for this recipe. I was able to stack 6 tortillas inside the slow cooker. This chicken recipe usually yields 8 tortillas, but I actually made 10.
Then in a separate bowl, mix 1 container of sour cream and 1 bottle of taco sauce together. After stirring the sour cream mixture, brush it over the tortillas. By this time, you can cover the slow cooker and set on low for about 4-5 hours. Take off the lid then sprinkle the remaining 1 cup cheese on top. Cover it again and set on low for another 1 5minutes or just until the cheese melts. You can serve it with your desired toppings. Suggested toppings are listed on the ingredients, it’s all up to you to decide which ones to put as a topping or this could be eaten with a quick salad.
Among the easy chicken recipes that I found, this is the one I love most. My diabetic mother in-law loved it too. My father in-law enjoyed it as much as we did. It is so nice to be surrounded with group of people you loved. I am so glad that they had a wonderful time having dinner with us.
