Pork Curry

Ingredients

1kg pork, cubed

 

For the marinade

3 cloves of garlic

1 inch piece of ginger

or use ginger, garlic paste for convenience.

1/2 tsp pepper

1 tsp Salt

1 tsp ground turmeric

1 tsp Chilli powder

3 tbsp Malt vinegar

1 tsp ground cumin

1 tsp dry mustard

2 tbsp oil

1 large onion, finely chopped

10 curry leaves

150-300ml hot water

 

Method

1. Crush the ginger and garlic together to form the base of the marinade. Place the pork in a bowl and add the marinade ingredients. Stir well to coat the meat cubes, cover and marinate overnight.

2. Fry onions in hot oil, until golden brown. Add curry leave and let it fry, then

3. Add marinated pork and cook, stirring continuously , until the meat is well cooked.

4. Add the hot water, cover and cook for 30 minutes until the pork is cooked.

5. Serve with rice and any other Asian dishes.
